There’s nothing that screams holidays more than baking!

At least in my family. Aside from the traditional Holiday cooking with the myriad of Polish dishes, baking is the other crucial and fabulous part of the Holidays.

My family’s go-to holiday desserts were usually fancy Polish cakes that are so darn hard to make I don’t even know how to make them (not that I’m a pro or anything anyway) but there is hope yet. Maybe someday. As for me, I’ve gotten in the habit of creating more simple yet delicious and HEALTHIER dessert for the Holidays. For many years now, my family has really shifted toward a more wholesome and healthier way of eating. I love it.

Since Thanksgiving is right around the corner, I decided to create a yummy baked good that’s super healthy and very Autumn-y. What else screams more like Thanksgiving than Squash right? Exactly.

So I created baked protein donuts muffins. I adapted my first Baked Pumpkin Donuts recipe and included two varieties of squash – pure pumpkin puree and roasted acorn squash puree. I had some remaining from the time I made Roasted Acorn Squash Protein Pancakes (yum). I thought it’d be a perfect way to use the rest of that up!

I’d probably use this recipe for muffins rather than donuts next time as the texture of these baked vegan donuts was just slightly more crumbly than I expected.  I did manage to take them some of them in mostly one piece (or two) but yeah… just make them into muffins, really. OR if you wait until they are COMPLETELY cooled, they will come out easier. I obviously did not do this for the photos, the one you can see was taken out maybe 15 minutes after taking out of the oven. Pardon the crumbles, haha.

The flavor though… fantastic. You can taste the nice spice of the pumpkin pie spice. They are just fabulous and don’t taste healthy at all. So good! I loved eating them crumbled on frozen yogurt last night.

A way to make your baked goods better is by using a cooking spray to make sure the baked goods come out easier, especially when you are not using liners. But not just any cooking spray, why not trying out Pompeian Grapeseed Oil Spray? This grapeseed oil s a light, all-natural cooking spray.
